Recipe: Root Vegetable Stew
I finally bought an Instant pot!
I have been looking for a stainless steel insert slow cooker for about 4 years! I wanted to avoid ceramic ones which can leach lead and the non-stick coating most slow cookers have.
This is an amazing piece of kit which is also a pressure cooker and does a variety of other things like yoghurt making!
Today I cooked a creamy coconut and veggie soup, it was so easy and perfect for a cooler winter night 🥰
4 cups of root vegetables (I used sweet potato and pumpkin but feel free to use anything you like!)
1 onion
3 garlic cloves
1 tin of cannellini beans
2 tins of coconut cream or tinned tomatoes
1 tsp thyme
2 cups of frozen peas or I used frozen peas, sweet corn and carrot mix
2 cups of spinach
Good grind of salt and pepper
Method
Sauté onions and garlic then add the root veggies, Canellini beans, coconut milk, thyme, salt and pepper and slow cook for approx 2.5hrs.
When all the root veggies are tender, add in the frozen peas and spinach and cook for another 15 mins.
Serve with any herbs you have in the fridge, I used dill! 😋
