Recipe: Coconut Chicken with Garlic and Thyme

This may be the shortest recipe I’ll ever post!  It’s so simple and my go to when I’m busy and we want something really yummy and comforting for dinner.

Ingredients

  • 4 x chicken thighs - skin on or off

  • 1 can coconut milk (another ½ can if they’re big thighs)

  • 2 cloves of crushed garlic - or more if you want it really garlicky

  • Few sprigs of thyme

  • Salt and pepper

Method

  • Brown off the chicken thighs in the pan or slow cooker

  • Add the coconut milk and thyme

  • Allow to cook for an hour then add the crushed garlic

  • Cook for another couple of hours until the chicken is falling apart

  • Serve with rice or green veggies - sometimes I’ll add some peas and zucchini into the chicken for a bit of colour and extra nutrients for my fussy 3 year old!
